Vegetable Turkey Soup {recipe}

When the air outside starts to cool, I love making delicious soups and stews to warm us up! The best part about soup/stew making is that most can be made in a slow cooker! And I just love cooking in my slow cooker. It makes the house smell so good and everyone anxiously awaits supper time!

One of my favorite soups is Vegetable Beef Soup. However, after a horrible experience I had with ground beef almost two years ago, I have been substituting it in every recipe with ground turkey! No one has been able to tell the difference!

Here is my yummy {we think} Vegetable Turkey Soup!

What You Will Need:

1 lb. ground turkey
1 med. onion
1 clove garlic
1 small head of cabbage
3-4 stalks of celery
1 bag frozen mixed veggies
1 can diced tomatoes, undrained
6 cups beef broth
1 can tomato sauce
Salt
Pepper
3/4 tbsp. opregano
2 bay leaves
* I also add a splash of red cooking wine, but I never measure it so I am not exactly sure how much I really put in! :)

Cook onions and turkey in skillet until meat is browned; drain. Combine cooked turkey with rest of ingredients in crock pot and cook on low for 6-8 hours. Pour into soup bowls and enjoy!

I have been trying very hard to meal plan. I try to sit and plan our meals out over a two week span. When I succeed at doing this, it truly makes my life easier. I know what I am making on what day and have all the ingredients on hand. Plus, it helps with grocery shopping and does in fact save us money. On Thursdays, I am planning on sharing some of the recipes we have been enjoying in the previous weeks!
